Here, the vines dig their roots deep into soils of clay and gravel. The grapes for this white wine from New Zealand are harvested at optimum ripeness. After being harvested by hand, the grapes are transported as quickly as possible to the winery, where they are gently pressed and the juice is then fermented in stainless steel tanks and partly in wooden barrels. The regular batonnage gives the wine additional complexity and a creamy texture. After several months on the lees, the Chardonnay is carefully filtered and bottled.
