Vinification of the Arbossar Priorat from Terroir Al Limit
This balanced red wine from Spain is vinified from the Cariñena grape variety. In Catalonia, the vines that produce the grapes for this wine grow on slate soils. A clearly significant influence on the ripening of the grapes also comes from the fact that the Cariñena grapes thrive in a warm climate. This is expressed, among other things, in particularly well-ripened grapes and a comparatively high alcohol content in the wine. When perfectly ripe, the grapes for the Arbossar Priorat are harvested exclusively by hand, without the use of strenuous and non-selective mechanical harvesters. After picking, the grapes are quickly brought to the press house, where they are sorted and gently crushed. Fermentation then takes place in large wooden vats at controlled temperatures. Vinification is followed by maturation for several months in oak barrels.
