Vinification of Ashbourne Sandstone by Hamilton Russell
The basis for the balanced Ashbourne Sandstone from South Africa is grapes from the Chardonnay, Sauvignon Blanc and Semillon varieties. After being hand-picked, the grapes are brought to the winery as quickly as possible. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation, the wine is aged for a few months on the fine lees before it is finally bottled.
