The Bin 407 Cabernet Sauvignon from Penfolds is a complex, concentrated and elegant red wine from the Australian wine region of South Australia.
In the glass, this wine is presented in a violet color with purple highlights. After decanting, this red wine presents itself with distinct aromas of juicy blackcurrants, mulberries, blueberries and dried vegetative notes (mint, fennel and anise). After a short time, notes of dried tomato as well as some leather and graphite showup.
The body is full and powerful. This Australian Cabernet has pressure and potential. The tannins are velvety, lively and blend harmoniously into the entire composition - supported by a fresh acidity and dense fruit fullness. In the remarkable finale, this red wine is fruity, with hints of caramelized shade morals and a pleasant earthy tone as well as a hint of peppermint.
Vinification of the Penfolds Bin 407
Like most wines from Penfolds, the Bin 407 is one of the so-called Multi-Regional & Multi-Vineyard blendings. In you, the best grapes from different regions are composed to grape varietal, varietal wines.
Separated by origin and parcels, the mash is traditionally fermented in stainless steel tanks. This red wine is then aged in small French (25% new wood) and American oak (9% new wood) barrels for 12 months. After maturation, this wine is gently removed, married to the Final Blend and rests for another year on the bottle in the wine cellars of Penfolds.
