Vinification of the Francois Montand Blanc de Blancs Brut

The basis for the elegant Blanc de Blancs Brut from Jura are grapes from the grape varieties Chardonnay, Colombard and Ugni Blanc. The grapes for this sparkling wine from France, when they are perfectly ripe, are harvested particularly quickly and at the coolest possible time of day to preserve their aromas. After the hand harvest, the grapes are taken to the press house by the fastest route. Here they are sorted and gently pressed. Now follows the fermentation of the base wines. After the cuvée has been put together, further aging follows on the basis of the Méthode Traditionelle. Subsequently, the Francois Montand Blanc de Blancs Brut matures for several months in the bottle and is finally disgorged.
