Vinification of the Chateau Haut Mouleyre Bordeaux Sauvignon Blanc

The basis for the balanced Bordeaux Sauvignon Blanc from Bordeaux are grapes from the grape varieties Sauvignon Blanc, Sauvignon Gris and Semillon. When perfectly ripe, the grapes for Bordeaux Sauvignon Blanc are harvested particularly quickly and at the coolest possible time of day to preserve their aromas. After the harvest, the grapes are quickly transferred to the press house. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. The vinification is followed by a few months of aging on the fine lees before the wine is finally bottled.
