The wine berries for this red wine from Chile are harvested, at the point of optimal ripeness, particularly quickly and at the coolest possible time of day in order to preserve their aromas. After harvesting, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks and small wooden barrels at controlled temperatures. After fermentation, the wine is aged for several months on the fine lees before it is finally racked.
