The grapes for Clos Apalta - Apalta Vineyard come from the Valle de Rapel in central Chile, specifically from the Apalta area. This part of the Valle Central lies in a crescent-shaped basin, bordered on one side by steep slopes and on the other by the river. During the day the sun provides warmth and intense ripening, while at night cool air flows into the valley, promoting the development of aromas.

The soils consist of a mixture of gravel, sand, clay and old river sediments. Rockier sections yield focused, firmly structured wines. Slightly deeper, clay-rich parcels bring richness and volume. The vines are densely planted and bear only few grapes, which increases concentration. The combination of climate, soil and slope creates a terroir that produces powerful yet elegant red wines.

The blend of Cabernet Sauvignon, Carmenère, Merlot and Petit Verdot is created through elaborate parcel-by-parcel work. Each variety ripens separately, as the harvest dates differ. Carmenère often needs a little more time to develop its full aroma of plum, herbs and spice. Cabernet Sauvignon reaches ideal ripeness when the tannins feel silky and the cassis notes clearly emerge. Alcoholic fermentation then starts at controlled temperatures. This keeps the fruit clear and the structure fine. During fermentation, regular pump-overs and gentle punching down of the cap are used to carefully extract tannin and color.

After fermentation, a longer maceration period often follows, during which the young wine gains additional depth and complexity. It is then pressed off gently. A large portion of the wine matures in barriques, mostly made of French oak. Barrel ageing lends the wine notes of vanilla, cedarwood, tobacco and dark chocolate and smooths the tannins.

During the maturation phase in cask, the wine rests on the fine lees, which through occasional bâtonnage contributes to greater richness and a creamy texture. Maturation in wood extends over many months, giving Clos Apalta its dense, multi-layered character. Some of the barrels are new oak, others previously used, creating a fine balance between wood and fruit.

Before bottling, the cellar master blends the individual lots into a cuvée that precisely reflects the terroir of Apalta. Each grape variety contributes its own building block.
