Vinification of Taittinger’s Comtes de Champagne Blanc de Blancs

The basis for the elegant Comtes de Champagne Blanc de Blancs from Champagne is grapes of the Chardonnay variety. Quite clearly, the Comtes de Champagne Blanc de Blancs is also defined by the climate and winemaking style of Champagne. This French wine can quite literally be described as an Old World wine that presents itself as exceptionally distinguished and complex. When they are perfectly ripe, the grapes for the Comtes de Champagne Blanc de Blancs are harvested exclusively by hand, without the use of coarse and less selective mechanical harvesters. After the harvest, the grapes are immediately brought to the press house. There they are selected and gently crushed. This is followed by the fermentation of the base wines. After the cuvée has been assembled, further maturation takes place on the basis of bottle ageing. The Taittinger Comtes de Champagne Blanc de Blancs then matures in the bottle for several months and is finally disgorged.
