Vinification of Terroir Al Limit Coreografia Montsant

The basis for the well-balanced Coreografia Montsant from Spain is grapes from the Garnacha and Grenache Blanc varieties. The grapes grow under optimal conditions in Catalonia. Here the vines drive their roots deep into clay soils. The ripening of the harvested grapes for this wine made from Garnacha and Grenache Blanc is influenced to a not insignificant extent by the climate of the growing region. In Catalonia, the grapes thrive in a warm climate, which is reflected, among other things, in particularly well-ripened grapes and a relatively high must weight. When perfect physiological ripeness is ensured, the grapes for the Coreografia Montsant are harvested exclusively by hand, without the use of stressful and less selective mechanical harvesters. After hand-picking, the grapes are brought to the winery as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation in large wooden vats at controlled temperatures. After fermentation, the wine matures for several months on the fine lees before it is finally bottled.
