Vinification of the Coreografia Priorat Clarette from Terroir Al Limit
This well-balanced red wine from Spain is made from the grape varieties Garnacha and Grenache Blanc. In Catalonia, the vines that produce the grapes for this wine grow on clay soils. The fact that the Garnacha and Grenache Blanc grapes thrive under the influence of a warm climate also has a very strong impact on the development of the harvested fruit. This is reflected, among other things, in particularly well-ripened grapes and a comparatively high alcohol content in the wine. The berries for this Spanish red wine are harvested exclusively by hand at optimal ripeness. After the harvest, the grapes are immediately taken to the pressing house. There they are sorted and gently crushed. Fermentation then takes place in large wooden vats at controlled temperatures.
