More information about Destí DOP - Merum Priorati
The Destí, matured in barrels and originating from the wine-growing region of Catalonia, reveals itself in the glass with a dense purplish red. On the nose, this red wine from Merum Priorati reveals all kinds of blackberries. As if that were not already impressive, further aromas such as forest floor, toasted wood and vanilla are contributed by maturation in large wooden casks.
This red wine from Merum Priorati is perfect for wine lovers who prefer their wine dry. Destí comes very close to that, as it was vinified with just 0.7 grams of residual sugar. On the palate, this powerful red wine is characterized by an incredibly silky texture. Thanks to its lively acidity, Destí appears wonderfully fresh and vibrant on the palate. The finish of this well-age-worthy red wine from the wine-growing region of Catalonia, more precisely from Priorat DOQ, finally impresses with a beautiful aftertaste. The finish is also accompanied by mineral notes from the slate-dominated soils.
Vinification of Destí by Merum Priorati
The starting point for the first-class and wonderfully powerful Destí cuvée from Merum Priorati are Carignan, Garnacha and Syrah grapes. In Catalonia, the vines that produce the grapes for this wine grow on slate soils. Due to the moderating influence of the nearby river, the grapes ripen more slowly and develop greater aromatic complexity. What is exceptional about the production of this red wine from Merum Priorati is the fact that the grapes in Priorat DOQ (ES) thrive on stone terraces. This traditional form of vineyard design is unfortunately very cost- and time-intensive and therefore only rarely found today. After the grape harvest, the grapes are quickly brought to the winery. There they are selected and gently crushed. Fermentation then takes place in large wooden vats at controlled temperatures. Vinification is followed by maturation for 12 months in French oak barrels.
