The Echezeaux Grand Cru AOC from Domaine des Perdrix enters the glass with a garnet red color with purple highlights. The Pinot Noir has a voluminous, fragrant bouquet of ripe dark fruits such as wild berries and cherries. This aroma is backed with fine spicy notes and herbal notes. Juicy on the palate with concentrated flavors of fully ripe cherry and distinct mineral notes. With a little more air in the glass, the Pinot Noir unfolds increasingly powerful, yet harmonious with supple fullness. Last but not least, its silky tannin gives the Grand Cru from Burgundy structure that suggests great potential. 

Vinification of the Echezeaux Grand Cru from Burgundy

For the Grand Cru from the Domain des Perdrix, all grapes are harvested and sorted by hand, the berries are partially destemmed and left on the skins for just under a week. This extracts phenolic components and colorants from the berry skins. After this, alcoholic fermentation with the surrounding yeasts begins and lasts for 14 days. During which a regular pigeage (repeated pressing down and submerging of the cap without pumping over the wines) supports the concentration of tannins, aromas and color from the grape skins. After completed fermentation and maceration, the wines are carefully drawn off, the must is pressed and now the forward and pressed wines are aged separately for about 15 to 18 months in so-called pièces, the typical Burgundian 228-liter French oak barrels (Burgundy, Allier, Vosges, forty percent new wood).
