Vinification of the Koonunga Hill Chardonnay by Penfolds

This elegant white wine from Australia is made from the Chardonnay grape variety. The grapes grow under optimal conditions in South Australia. Here, the vines drive their roots deep into soils of clay, sand, and brown earth. After the grape harvest, the grapes are brought to the winery as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation in small wooden barrels at controlled temperatures. Vinification is followed by maturation for several months in French oak barrels.
