Vinification of the Letargo Tempranillo by Bodegas D. Mateos
The powerful Letargo Tempranillo from Spain is a varietal wine made from the Tempranillo grape. At optimal ripeness, the grapes for the Letargo Tempranillo are harvested exclusively by hand, without the use of coarse and less selective machinery. After harvesting, the grapes are immediately brought to the winery. There they are selected and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation is complete, the Letargo Tempranillo can continue to harmonize on the fine lees for several months.
