Vinification of the Domaine de la Garenne (Bourgogne) Mâcon Azé
The balanced Mâcon Azé from France is a single-varietal wine made from the Chardonnay grape variety. In Burgundy, the vines that produce the grapes for this wine grow on limestone soils. The Mâcon Azé is an Old World wine through and through, as this French wine exudes an exceptional European charm that clearly underlines the success of wines from the Old World. After harvesting, the grapes are quickly brought to the press house. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the wine is aged for several months on the fine lees before it is finally drawn off.
