Harvesting is carried out carefully by hand, with the grapes placed in small picking crates one by one. An initial selection takes place in the vineyard, followed by another strict selection on the sorting table in the cellar. Only flawless, optimally ripe Tempranillo grapes proceed to fermentation.
After gentle destemming, temperature-controlled fermentation begins in stainless-steel tanks. Afterwards, part of the wine matures for several months in wooden barriques, while the other part remains in stainless-steel tanks.
