The first nose of Muscat de Saint Jean de Minervois presents nuances of star fruit, papaya and pineapple. The fruity components of the bouquet are joined by more fruity-balsamic nuances.

This creamy dessert wine is full-bodied and multifaceted on the palate. Due to its vital fruit acidity, the Muscat de Saint Jean de Minervois is fantastically fresh and lively on the palate. In the finish, this dessert wine from the Languedoc wine-growing region finally inspires with considerable length. Again, hints of morello cherry and mango appear. In the aftertaste, mineral notes of the soils dominated by clay and limestone are added.

Vinification of the Domaine Paul Mas Muscat de Saint Jean de Minervois

This wine clearly focuses on one grape variety, and that is Yellow Muscat. Only the best grape material was used for this exceptionally powerful single-varietal wine from Domaine Paul Mas. The grapes grow under optimal conditions in the Languedoc. The vines here dig their roots deep into soils of clay and limestone. After harvesting, the grapes quickly reach the winery. Here they are selected and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. At the end of the fermentation, the Muscat de Saint Jean de Minervois is allowed to further harmonize on the fine lees for a few months.
