Vinification of the Pahi Pinot Noir from Escarpment Winery
This powerful red wine from New Zealand is vinified from the Pinot Noir grape variety. After the grape harvest, the grapes are immediately brought to the winery. There they are sorted and gently crushed. Fermentation in stainless steel tanks at controlled temperatures follows. After fermentation, the wine is aged for several months on the fine lees before it is finally drawn off.
