The Sancerre Rosé from Pascal Jolivet from the Val de Loire shows a brilliant, delicate rose-red color in the wine glass. When the glass is swirled, this rosé wine is characterized by a marvelous lightness that lets it nimbly dance in the glass. On the palate, Pascal Jolivet's Sancerre Rosé starts off wonderfully dry, firm and aromatic. There is dry and there is really dry. This rosé wine belongs to the second group, as it was bottled with just 0.9 g of residual sugar. On the tongue, this light-footed rosé is marked by an extraordinarily light texture. Thanks to its moderate acidity, the Sancerre Rosé caresses the palate with a soft feel, without at the same time lacking juicy liveliness. The finish of this youthful rosé wine from the wine-growing region of the Val de Loire, more precisely from Sancerre, finally convinces with a remarkable length. The aftertaste is also accompanied by mineral notes from the clay- and limestone-dominated soils.

Vinification of the Sancerre Rosé by Pascal Jolivet

This rosé wine clearly focuses on a single grape variety, namely Pinot Noir. Only first-class grape material was used for this exceptionally elegant varietal wine from Pascal Jolivet. The grapes grow under optimal conditions in the Val de Loire. Here the vines drive their roots deep into soils of limestone and clay. When perfect physiological ripeness is ensured, the grapes for the Sancerre Rosé are harvested exclusively by hand, without the help of rough and less selective machinery. After the hand harvest, the grapes are quickly brought to the press house. There they are sorted and gently crushed. Fermentation in stainless steel tanks at controlled temperatures follows. After fermentation, the wine matures for several months on the fine lees before it is finally bottled.

Food recommendation for Pascal Jolivet Sancerre Rosé

Ideally, enjoy this rosé wine from France well chilled at 8 - 10°C as an accompanying wine with cod and cucumber-mustard vegetables, vegetable stew with pesto, or pasta with sausage dumplings.
