Vinification of Winzer Krems St. Severin Blauer Zweigelt

The balanced St. Severin Blauer Zweigelt from Austria is a varietal wine, vinified from the Zweigelt grape variety. In Lower Austria, the vines that produce the grapes for this wine grow on clay and gravel soils. Once perfect physiological ripeness is ensured, the grapes for the St. Severin Blauer Zweigelt are harvested exclusively by hand, without the use of coarse and less selective mechanical harvesters. After harvesting, the grapes are brought to the winery as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation is complete, the St. Severin Blauer Zweigelt can continue to harmonize on the fine lees for several months.
