Vinification of Cabernet Sauvignon Merlot
The Cabernet Sauvignon Merlot is produced in the renowned Neusiedler See growing region in Burgenland, which, thanks to its warm climate and long hours of sunshine, is excellently suited to these noble grape varieties. The grapes are harvested by hand early in the morning to optimally preserve freshness and full ripeness. After arrival, the berries are sorted and gently destemmed.
Vinification is carried out in the classic way, separately by grape variety, with maceration fermentation taking place at a controlled temperature of approx. 28 °C. In this process, the winemakers extract the full aroma and color intensity of the Cabernet Sauvignon and Merlot grapes. After fermentation, the wine matures for around 12 months in high-quality oak, mostly of French origin. The wood completes the character with fine vanilla and spice notes and harmonizes the firm tannins of the grapes.
Through maturation in oak barrels, the Cabernet Sauvignon Merlot develops a velvety texture and full-bodied structure that makes every sip an experience. The blend perfectly combines the power of Cabernet Sauvignon with the velvety elegance of Merlot. After ageing, gentle filtration is carried out so that the typical aromas are preserved without restriction.
