The basis for the well-balanced The Pavillion Rosé from the Coastal Region is grapes from the Shiraz variety. The grapes for this rosé wine from South Africa are harvested exclusively by hand when they are perfectly ripe. After the harvest by hand, the grapes are quickly brought to the winery. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation is complete, The Pavillion Rosé can continue to harmonize on the fine lees for a few months.
