More information about Aristargos 1,5l Magnum - David&Nadia
The Aristargos 1.5l Magnum – David&Nadia shines in the glass in a pale straw yellow with brilliant reflections reminiscent of lemon peel. Already at the first swirl, a fine yet concentrated aroma rises from the glass. Ripe apple and juicy pear meet fresh citrus fruits, lime and grapefruit. Added to this are a hint of white pepper, delicate herbal spice and a subtle scent of chamomile and orange blossom.
This cuvée of Chenin Blanc, Clairette, Roussanne and Semillon shows a clear, straightforward style on the palate. The fruit comes across as precise, not loud, rather elegant and finely interwoven. Ripe yellow apple, Williams pear and lemon zest meet notes of peach and a touch of mirabelle. A lively, well-integrated acidity carries the aromas across the entire palate and lends freshness.
The structure feels compact, while the wine remains slender and taut. A touch of creamy texture coats the palate without diminishing the tension. Fine minerality recalls wet stone and chalk and highlights the character of its West Cape origin. Subtle hints of almond skin, pale nuts and a trace of wax reveal the influence of Roussanne and Semillon.
On the finish, the Aristargos 1.5l Magnum – David&Nadia shows length and complexity. The aftertaste is salty, spicy and fresh, with lingering notes of citrus, white pepper and fine herbs. This white wine serves perfectly as a bridge between freshness and depth, between South African sunshine and cool elegance in the glass.
The grape varieties each contribute their own character and form a harmonious whole. Chenin Blanc brings structure, yellow fruit and vibrant acidity. Clairette adds freshness and clarity to the aromatics. Roussanne contributes volume, spice and a delicate texture. Semillon complements with fine creaminess and slightly nutty notes. The result is a white wine that comes across as refined and complex, yet remains highly drinkable.
Typical impressions of this cuvée can be summed up as follows:
- Yellow-fruited aromas of apple, pear, peach and mirabelle
- Citrus brightness with lime, grapefruit and lemon peel
- Spicy interplay of white pepper, herbs and fine minerality
- Elegant, taut structure with subtle creaminess
- Long, salty-spicy finish with a clear, focused line
The Western Cape region in the south of Africa shapes this wine with an exciting interplay of sun, wind and maritime influences. Cooling breezes from the Atlantic meet intense light conditions. The grapes reach full ripeness and still retain freshness and tension. Varied soils, from granite to sand and slate, give the cuvée depth, drive and a distinctive minerality.
The style of the wine is modern, terroir-driven and precise. Not an opulent fruit bomb, but a focused, finely drawn white wine with clear contours. Especially in the magnum bottle, the aromatic play develops particularly harmoniously. The larger bottle offers more maturity character and special elegance, ideal for connoisseurs with an eye for detail and finesse.
- Chenin Blanc forms the backbone with structure and radiance.
- Clairette contributes freshness, lightness and citrus accents.
- Roussanne adds spice, volume and fine texture.

This creates an overseas white wine that recalls great Rhône cuvées and yet clearly shows a South African signature. Tension, precision and drinkability are at the forefront. The Aristargos 1.5l Magnum – David&Nadia accompanies long evenings, fine menus and special moments with style and character.
Production of Aristargos 1.5l Magnum by David&Nadia
The grapes come from selected vineyards in the Western Cape, partly with old vines and low yields. The climate offers warm days and cool nights, which allows for both aromatic density and freshness. The soils range from weathered granite and slate to sandy sites. This diversity creates depth, a clear acid structure and pronounced minerality in the wine.
Chenin Blanc forms the core of the cuvée. Old vines deliver concentrated grapes with dense aromatics and pronounced acidity. Clairette is sourced from cooler parcels and emphasizes the citrus-driven profile. Roussanne grows mainly in warmer sites and shows spice, volume and fine honey accents there. Semillon comes from selected blocks with light, gravelly soils, which strengthens elegance and structure.
Harvesting is carried out very precisely according to the ripeness of each parcel. Each variety reaches the cellar at its ideal moment. Picking in the early morning preserves freshness and aromatic intensity. Careful selection of the grapes ensures that only ripe, clean fruit finds its way into the cuvée.
In the cellar, gentle handling follows, with soft pressing of whole clusters or destemmed berries, depending on the grape variety. A short maceration time enhances structure and aromas in some lots. Fermentation takes place with temperature control, predominantly in stainless steel tanks and partly in larger wooden barrels to develop volume and complexity.
A portion of the cuvée matures on the fine lees. Regular stirring of the lees, bâtonnage, gives the wine creaminess, depth and subtle nutty complexity. The winemakers aim for a clear, precise style. Wood supports the texture but never dominates the profile. This keeps the aromatics of the varieties and the terroir in the foreground.
Depending on the vintage, part of the maturation takes place in neutral barrels that impart no noticeable wood character, but promote micro-oxidation and finesse. After separate maturation, the individual lots are carefully blended. This step requires plenty of experience to balance fruit, acidity, spice and texture correctly.
Before being filled into the magnum bottle, the finished cuvée rests in tank for a while. During this time, the components meld into a harmonious whole. Bottling with cork preserves the wine’s development potential. Especially in the 1.5-litre bottle, Aristargos matures more slowly, retains freshness and at the same time gains additional complexity.
Serving recommendations for Aristargos 1.5l Magnum by David&Nadia
This dry white wine accompanies a wide range of fine dishes. As an aperitif, Aristargos opens the evening with fresh citrus notes and vibrant acidity. It pairs particularly well with light starters such as marinated fish, ceviche or delicate carpaccio variations of white fish.
With seafood, the wine shows its full strength. Grilled prawns, scallops in butter and herbs or mussels in white wine broth harmonize perfectly with the minerality and fine spice. Noble fish such as sea bass, turbot or cod also benefit from the clear structure and long finish.
In modern, lighter cuisine, Aristargos shines alongside vegetable dishes. Pan-fried green asparagus with lemon zest, fennel, ratatouille or Mediterranean vegetable tarts are ideal partners. Fresh salads with goat’s cheese, nuts and citrus vinaigrette also find an elegant counterpart in this wine.
With poultry, the cuvée reveals its creamy texture and subtle spice. Stuffed corn-fed chicken, lemon roast chicken from the oven or guinea fowl with herbs pair beautifully with the wine’s structure. A light risotto with lemon, peas or green asparagus is likewise a very harmonious combination.
For cheese, a selection from mild to medium-aged varieties is recommended. Fresh goat’s cheese, young Comté, matured Gruyère or a creamy Brie are all excellent matches. The nutty and gently spicy notes in the wine echo these aromas elegantly and extend them on the palate.
The magnum bottle is ideal for festive occasions. Family celebrations, weddings, birthdays or a large dinner with friends provide the perfect stage. Aristargos can accompany a multi-course menu from aperitif to main course, showing a different facet with each course.
The ideal serving temperature is around eight to ten degrees Celsius. This allows the freshness to unfold without masking the fine texture. Gentle aeration in the glass or a short time in a carafe further increases aromatic depth. A medium-sized white wine glass with a slightly rounded bowl allows the wine to display its complex structure and spicy freshness.
With proper cellaring, Aristargos in the magnum bottle develops additional maturity and complexity over several years. Citrus notes then recede slightly and make room for more yellow fruit, honey nuances and even greater depth on the finish. In this way, the wine offers plenty of pleasure today and even more nuance in the glass in the future.
