When swirling the glass, this white wine is characterized by a wonderful lightness that lets it dance spiritedly in the glass. The nose of this white wine from Saale-Unstrut impresses with hints of pineapple, physalis, apple and mango. If we pursue the aromatics further, oriental spices, black tea and gingerbread spice are added.
The Wolfram Proppe Auxerrois presents itself to the connoisseur as delightfully dry. At the same time, this white wine never appears rough-hewn or austere, as one might expect from a wine in the premium and single-vineyard segment. Light-footed and multi-layered, this light white wine presents itself on the palate. On the finish, this youthful white wine from the Saale-Unstrut winegrowing region ultimately delights with good length. Again, there are hints of pear and mango.
Vinification of Wolfram Proppe Auxerrois
The basis for the elegant Auxerrois from Saale-Unstrut is grapes of the Auxerrois variety. Auxerrois is an Old World wine in the best sense of the word, as this German wine exudes an exceptional European charm that clearly underscores the success of wines from the Old World. The ripening of the harvested grapes for this Auxerrois wine is influenced to a very great extent by the climate of the growing region. In Saale-Unstrut, the grapes thrive in a rather cool climate, which is reflected, among other things, in particularly long and uniform clusters and a rather moderate must weight. After harvesting, the grapes are brought to the winery immediately. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, the Auxerrois can continue to harmonize on the fine lees for a few months.
Food recommendation for Wolfram Proppe Auxerrois
This German wine is best enjoyed well chilled at 8–10°C. It pairs perfectly as an accompanying wine with potato pan with salmon, fruity endive salad or stuffed cabbage rolls.
