Vinification of the Brut Prestige Millésime from Dourdon Vieillard
The basis for the balanced Brut Prestige Millésime from Champagne is grapes from the Chardonnay, Pinot Meunier, and Pinot Noir varieties. In Champagne, the vines that produce the grapes for this wine grow on clay and limestone soils. After hand-picking, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. This is followed by the fermentation of the base wines. After the assemblage of the Champagne, further aging takes place using the Méthode Traditionelle. The Dourdon Vieillard Brut Prestige Millésime then matures in the bottle for 6 months.
