With Dourdon Vieillard Brut Tradition, a first-class Champagne comes into the wine glass. It offers a wonderfully bright, light red color. The mousse of this Champagne sparkles in the glass with an exceptionally fine, elegant and long-lasting effervescence. When you swirl the glass, you can perceive an excellent balance in this sparkling wine, as it neither appears watery nor syrupy or liqueur-like on the glass walls. On the nose, this Dourdon Vieillard sparkling wine shows all kinds of quince. As if that were not already impressive, maturation in stainless steel adds lime and beeswax.
Balanced and multi-layered, this light, creamy and crisp sparkling wine presents itself on the palate. The finish of this sparkling wine from the Champagne winegrowing region, more precisely from Champagne, finally delights with a beautiful aftertaste. The aftertaste is also accompanied by mineral notes from the clay- and limestone-dominated soils.
Vinification of Dourdon Vieillard Brut Tradition
The basis for the first-class and wonderfully balanced Brut Tradition cuvée from Dourdon Vieillard is Chardonnay, Pinot Meunier and Pinot Noir grapes. The grapes grow under optimal conditions in Champagne. The vines sink their roots deep into clay and limestone soils here. Naturally, Brut Tradition is shaped by more than just the soil of Champagne. In the best sense of the word, this French wine can be described as an Old World wine, presenting itself as exceptionally distinguished and complex. A not-to-be-underestimated influence on the development of the grapes also comes from the fact that the Chardonnay, Pinot Meunier and Pinot Noir grapes thrive in a comparatively cool climate. This is expressed, among other things, in particularly long and evenly ripened grapes and a rather moderate alcohol content in the wine. After harvesting, the grapes are quickly brought to the winery. There they are selected and gently crushed. This is followed by the fermentation of the base wines. After the assemblage of the Champagne, further maturation takes place on the basis of the Méthode Traditionelle. The Dourdon Vieillard Brut Tradition then matures for 6 months on the full lees.
