The Brut Tradition from the hand of Dourdon Vieillard in Champagne presents a bright, light red color in the glass. The mousse of this sparkling wine appears very fine-beaded and extremely persistent in the glass. After the first swirl, an excellent balance can be perceived in this sparkling wine, as it does not appear watery, syrupy, or liqueur-like on the glass walls. Poured into a sparkling wine glass, this Old World sparkling wine reveals wonderfully refined and complex aromas of quince, rounded off by further fruity nuances.
Balanced and multi-layered, this creamy, crisp and light sparkling wine presents itself on the palate. On the finish, this wine from the Champagne wine-growing region finally delights with a beautiful length. Once again, hints of quince appear. In the aftertaste, mineral notes from the limestone- and clay-dominated soils are added.
Vinification of the Brut Tradition from Dourdon Vieillard
The balanced Brut Tradition from France is a cuvée vinified from the grape varieties Chardonnay, Pinot Meunier and Pinot Noir. In Champagne, the vines that produce the grapes for this wine grow on clay and limestone soils. The Brut Tradition is an Old World wine in the best sense of the word, as this French wine exudes an exceptional European charm that clearly underscores the success of wines from the Old World. A considerable influence on the ripening of the harvest also comes from the fact that the Chardonnay, Pinot Meunier and Pinot Noir grapes thrive under the influence of a rather cool climate. This is expressed, among other things, in particularly long and evenly ripened grapes and a rather moderate alcohol content in the wine. After the harvest, the grapes are brought to the press house as quickly as possible. Here they are sorted and gently crushed. This is followed by the fermentation of the base wines. After the composition of the final Champagne, the further maturation takes place on the basis of the Méthode Traditionelle. This is followed by bottle aging for 6 months.
