Vinification of the Cava Rosado from Mont Marcal
The elegant Cava Rosado from Spain is a single-varietal wine, pressed from the Trepat grape variety. At the time of optimal ripeness, the grapes for the Cava Rosado are harvested particularly quickly and at the coolest possible time of day to preserve their aromas. After the harvest, the grapes are quickly transferred to the press house. Here they are selected and carefully broken up. This is followed by bottle fermentation at controlled temperatures.
