In the glass, José Pariente’s Finca Las Comas reveals a bright, pale yellow color. The color of this white wine also shows golden-yellow reflections at the core. After the first swirl, this white wine displays a first‑class balance, as it neither appears watery nor syrupy or liqueur-like on the glass walls. With a little time in the glass, this Old World white wine presents wonderfully expressive aromas of lemon, pink grapefruit, lemongrass and orange, rounded off by forest floor, cinnamon and vanilla contributed by maturation in wooden casks.
This wine delights with its elegantly dry flavor profile. It was bottled with exceptionally little residual sugar. This is a genuine quality wine that clearly stands out from simpler qualities and thus, despite all its dryness, this Spaniard enchants with the finest balance. Vinification of José Pariente Finca Las Comas
This well‑balanced Spanish white wine is vinified from the Verdejo grape variety. Finca Las Comas is an Old World wine through and through, as this Spaniard exudes an exceptional European charm that clearly underscores the success of Old World wines. The ripening of the grapes for this Verdejo wine is to a considerable extent influenced by the climate of the growing region. In Castile and León, the grapes thrive in a warm climate, which is reflected, among other things, in particularly well‑ripened grapes and a relatively high must weight. At optimal ripeness, the grapes for Finca Las Comas are harvested exclusively by hand, without the help of rough, less selective harvesters. After picking, the grapes are brought to the press house without delay. There they are selected and carefully crushed. Fermentation then takes place in large wooden casks at controlled temperatures. After the end of fermentation, Finca Las Comas is aged for several months in 1,000‑liter oak fuders. The maturation in wooden casks is followed by a substantial period of bottle aging, which makes this white wine even more complex.
