Vinification of Château Cantemerle Grand Cru Haut-Médoc
This balanced red wine from France is vinified from the grape varieties Cabernet Franc, Cabernet Sauvignon, Merlot, and Petit Verdot. At optimal ripeness, the grapes for the Grand Cru Haut-Médoc are harvested exclusively by hand, without the use of coarse and barely selective machinery. After the harvest, the grapes are quickly brought to the winery. There they are selected and gently crushed. This is followed by fermentation in small oak barrels at controlled temperatures. Vinification is followed by maturation for several months on the fine lees before the wine is finally bottled.
