Vinification of the Encry Grand Rosé Brut Grand Cru
The foundation for the first-class and wonderfully balanced Grand Rosé Brut Grand Cru cuvée from Encry is Chardonnay and Pinot Noir grapes. The Grand Rosé Brut Grand Cru is an Old World wine in the best sense of the word, as this French wine exudes an exceptional European charm that clearly underscores the success of wines from the Old World. The ripeness of the grapes for this wine made from Chardonnay and Pinot Noir is heavily influenced by the climate of the growing region. In Champagne, the grapes thrive in a rather cool climate, which is reflected, among other things, in particularly long and evenly ripening grapes and a rather moderate must weight. After the hand harvest, the grapes are brought to the press house as quickly as possible. There they are sorted and gently pressed. This is followed by the fermentation of the base wines. After composing the final Champagne, further maturation takes place on the basis of the Méthode Traditionelle. This is followed by bottle aging for 36 months.
