Here, the vines sink their roots deep into loess soils. When perfect physiological ripeness is ensured, the grapes for the Grauer Burgunder tagein.tagaus are harvested particularly quickly and at the coolest possible time of day in order to preserve their aromas. After harvesting, the grapes are swiftly brought to the winery. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation, the wine is aged for several months on the fine lees before it is finally bottled.
