Vinification of the Albet I Noya Lignum Negre Penedès D.O.
The powerful Lignum Negre Penedès D.O. from Spain is a cuvée, organically vinified from the grape varieties Cabernet Sauvignon, Garnacha and Merlot. After the grape harvest, the grapes are immediately taken to the winery. Here they are selected and carefully crushed. Then fermentation takes place in small wood at controlled temperatures. Vinification is followed by aging on the fine lees for several months before the wine is finally bottled. Once the wine is finished, the Lignum Negre Penedès D.O. is carefully harmonized.
