Vinification of the Mont du Toit Paarl WO from Mont du Toit

This powerful red wine from South Africa is vinified from the grape varieties Cabernet Franc, Cabernet Sauvignon, Merlot and Shiraz. After the hand harvest, the grapes reach the press house by the fastest route. Here they are sorted and carefully broken up. This is followed by fermentation in small wood at controlled temperatures. After fermentation is completed, the Mont du Toit Paarl WO is aged for another 25 months in oak barriques.
