In the Northern Aegean, the vines that produce the grapes for this wine grow on soils of volcanic rock. After being harvested by hand, the grapes are brought to the winery as quickly as possible. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. The vinification is followed by maturation on the fine lees for several months before the wine is finally drawn off.
