Vinification of Moscato Di Siracusa by Fausta Mansio
The basis for the powerful Moscato Di Siracusa from Sicily is grapes of the Yellow Muscat grape variety. In Sicily, the vines that produce the grapes for this wine grow on clay soils. After the grape harvest, the grapes are quickly brought to the winery. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation is complete, Moscato Di Siracusa can continue to harmonize for a few months on the fine lees.
