Vinification of the 30 Wishes Tempranillo from Neleman

This wine clearly focuses on one grape variety, and that is Tempranillo. Only impeccable grapes were used for this wonderfully balanced single varietal wine from Neleman. In Valencia, the vines that produce the grapes for this wine grow on soils of limestone and slate. At the time of optimal ripeness, the grapes for the 30 Wishes Tempranillo are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After the hand harvest, the grapes are quickly transferred to the press house. Here they are sorted and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. Vinification is followed by aging on the fine lees for several months before the wine is finally bottled.

This red wine from Spain is best enjoyed at a temperate 15 - 18°C. It is perfect as an accompaniment to vegetable stew with pesto, goose breast with gingered red cabbage and marjoram or leek soup.
