The Pinot Noir Estate Wine of Paul Cluver reveals itself in radiant plum of beautiful luminosity. The nose presents delicate earthy almond aromas combined with notes of cranberry, pomegranate and raspberry. The aromatics continue on the palate, where they are complemented by interesting seaweed and savory umami nuances. Overall, it comes across as balanced, harmonious and very elegant with particularly taut tannins and the distinctive finish typical of the grape variety.

Vinification for the Paul Cluver Pinot Noir Estate Wine

Hand-picked grapes. cold maceration for 5-8 days. Spontaneous fermentation. The pomace is pumped over twice a day. Aging for 11 months in oak barrels together with the lees.
