The Seven Flags Pinot Noir from Paul Cluver is a truly outstanding wine from this cool region of South Africa. It presents itself as full-bodied, firm and spicy, yet particularly multi-layered. The bouquet reveals black cherry and vanilla with a hint of chocolate. The palate is filled out similarly to a Burgundy, with plenty of dense, ripe, soft tannins. A wine with impressive character and plenty of suppleness, which pairs well with game dishes, mushrooms, trout with beurre rouge and veal cutlets!
With this wine, Paul Cluver has come closer to the perfect Pinot Noir than ever before. He enthuses: "A vineyard and barrel selection that brings together in one wine everything our family believes in when it comes to winemaking. This wine is the highest expression of our terroir."
Vinification of the Seven Flags Pinot Noir
Hand-picked grapes. 6 days of cold maceration. Fermentation starts spontaneously, followed by the addition of special Burgundian yeasts. The cap is pumped over 3–4 times a day. Aged for 11 months in oak barrels (20% new) on the lees. Only the best Pinot Noir barrels are used for the Seven Flags.
