Paul Cluver's  Seven Flags Pinot Noir  is a truly outstanding wine from this cool region of South Africa. It presents itself both body-rich, firm and spicy, as well as particularly complex. The bouquet shows black cherry and vanilla with a little chocolate. The palate is filled in a similar way to a burgundy, here you will find plenty of dense, ripe, soft tannin. A wine with impressive character and a lot of melting that goes with game dishes, mushrooms, trout with Beurre rouge and veal chops!

This brings Paul Cluver closer than ever to the perfect Pinot Noir. He enthuses: "A selection of vineyards and barrels that brings together all that our family believes in when it comes to winemaking. This wine is the highest expression of our terroir."

Vinification for  the Seven Flags Pinot Noir

Hand-picked grape material. 6 days cold maceration. First fermentation starts spontaneously, then addition of special Burgundian yeasts. The pomace hat is pumped over 3-4 times a day. Ageing for 11 months in oak barrels (20% new) together with the yeast. Only the best Pinot Noir barrels are processed for the Seven Flags
