The ripening of the harvest for this wine from Cabernet Sauvignon, Manto Negro, Merlot, and Shiraz is significantly influenced by the climate of the growing region. In the Balearic Islands, the grapes thrive in a warm climate, resulting in particularly well ripened grapes and a relatively high must weight. The grapes for this Spanish red wine are harvested exclusively by hand when perfectly ripe. After harvest, the grapes are quickly transported to the press house, where they are sorted and gently crushed. This is followed by fermentation in small French oak barrels at controlled temperatures. After fermentation, the Poet Colleció Privada is matured for an additional 14 months in French oak barriques.
