The Peter Mertes Rotwild Dornfelder delights with its elegantly dry flavor profile. It was bottled with 6.4 grams of residual sugar. By no means a given for an entry-level wine, this German wine naturally charms, despite all its dryness, with the finest balance. Excellent flavor does not necessarily require a lot of residual sugar. On the palate, the texture of this light-footed red wine presents itself as wonderfully powerful. Thanks to its lively fruit acidity, the Rotwild Dornfelder reveals itself on the palate as impressively fresh and vibrant. Vinification of the Rotwild Dornfelder from Peter Mertes
This wine clearly focuses on a single grape variety, namely Dornfelder. Only first-class grapes were used for this wonderfully elegant varietal wine from Peter Mertes. After the harvest, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Vinification is followed by several months of aging on the fine lees before the wine is finally bottled. After the wine has been completed, the Rotwild Dornfelder is gently harmonized.
