At optimal ripeness, the grapes for the Saint-Emilion Grand Cru Classé are harvested exclusively by hand, without the use of rough and barely selective mechanical harvesters. After the harvest, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation in small oak barrels at controlled temperatures. After fermentation has ended, the powerful Saint-Emilion Grand Cru Classé is aged for several months in oak barriques.
