With José Pariente Sauvignon Blanc, a first-class white wine finds its way into the glass. It reveals a wonderfully bright, pale yellow color. On the nose, this José Pariente white wine presents all kinds of Galia melon, white currants, star fruit, gooseberries and guavas. As if that were not already impressive, maturation in stainless steel adds lovage, Mediterranean herbs and green bell pepper.
José Pariente Sauvignon Blanc delights with its elegantly dry flavor profile. It was bottled with exceptionally little residual sugar. This is a genuine quality wine that clearly stands out from simpler qualities and, despite all its dryness, this Spaniard enchants with the finest balance. Flavor does not necessarily require sugar. On the palate, this well-balanced white wine is characterized by an immensely crisp texture. The finish of this youthful white wine from the Castilla y León wine-growing region, more precisely from Rueda DO, is ultimately impressive with considerable length. The aftertaste is also accompanied by mineral notes from the limestone- and gravel-dominated soils.
Vinification of Sauvignon Blanc by José Pariente
The basis for the balanced Sauvignon Blanc from Castilla y León is grapes of the Sauvignon Blanc variety. In Castilla y León, the vines that produce the grapes for this wine grow on limestone and gravel soils. After the grape harvest, the grapes are swiftly brought to the winery. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Vinification is followed by maturation for several months on the fine lees before the wine is finally bottled.
