The grapes for Stellenbosch Cabernet Sauvignon - Boekenhoutskloof come from selected sites in Stellenbosch, one of South Africa’s most important red wine terroirs. The climate is maritime in character: warm days allow the grapes to ripen fully, cooler nights preserve the necessary freshness. Winds from the Atlantic bring additional cooling and promote a slow, aroma-rich development of the berries. The vines take root in an exciting combination of granite and sandstone soils. Granite provides structure, finesse and a pronounced mineral note, while sandstone lends the wines warmth, depth and dark fruit. This diversity is reflected in the complex flavor profile and gives the Cabernet Sauvignon from Stellenbosch its unmistakable signature. Harvesting is done selectively, parcel by parcel, in order to process only perfectly ripe grapes. Several passes through the vineyards ensure a high level of quality. Strict selection already takes place in the vineyard, followed by a further sorting in the cellar so that only clean, high-quality fruit enters the fermentation vessels. Fermentation starts in concrete tanks, which allow particularly precise temperature control and preserve the character of the grape variety without distortion. Concrete ensures even extraction of color, tannin and aromas without imparting any flavor of its own. The wine then matures for around 18 months in small French oak barrels. Some of these are new barriques, the rest used barrels, creating a perfect balance between fruit and oak style. Barrel maturation gives the wine notes of toasted wood, dark chocolate, mocha and fine vanilla without masking the varietal character of Cabernet Sauvignon. Aging in French oak refines the tannins, smooths the structure and lends additional depth and aging potential. The Boekenhoutskloof house style always strives for clarity, precision and expression of origin, without opulent heaviness. Before bottling, the wine is gently clarified so that it fully retains its density and aromatics.
