With the Paritua Stone Paddock Scarlett, a first-class red wine flows into the swirled glass. Here it offers a wonderfully bright, purple-red color. In the glass, this red wine from Paritua presents aromas of blackberry, complemented by chocolate, cedarwood, and blackcurrant. On the palate, Paritua’s Stone Paddock Scarlett starts wonderfully dry, firm, and aromatic. There is dry, and then there is really dry. This red wine belongs to the second group, as it was bottled with only 0.9 g of residual sugar. On the palate, the texture of this well-balanced red wine is wonderfully meaty. Thanks to its present acidity, the Stone Paddock Scarlett appears exceptionally fresh and lively on the palate. On the finish, this wine from the New Zealand North Island winegrowing region, which has good aging potential, delights with remarkable length. Once again, hints of blackberry appear.

Vinification of the Paritua Stone Paddock Scarlett

The basis for the first-class and wonderfully balanced Stone Paddock Scarlett cuvée from Paritua are Cabernet Franc, Cabernet Sauvignon, and Merlot grapes. When perfect physiological ripeness is ensured, the grapes for the Stone Paddock Scarlett are harvested particularly quickly and at the coolest possible time of day in order to preserve their aromas. After hand-picking, the grapes are swiftly brought to the press house. There they are selected and gently crushed. This is followed by fermentation in small wooden barrels at controlled temperatures. After fermentation is complete, the elegant Stone Paddock Scarlett is matured for several more months in French oak barrels.

Food recommendation for Paritua’s Stone Paddock Scarlett

This New Zealander is best enjoyed at a tempered 15–18°C. It is perfectly suited as an accompanying wine to goose breast with ginger red cabbage and marjoram, boeuf bourguignon, or ossobuco.
