In the glass, Umami Cuvée Goldkapsel - Ellermann-Spiegel presents a deep dark purple with a radiant core and a fine, ruby-red rim. The dense legs on the glass hint at concentration and a mature structure. Already with the first swirl, an intense aroma of ripe black cherry, blackcurrant and dark blackberry rises from the Burgundy glass.
The nose is multi-layered. Alongside the dark fruit, subtle notes of mint, eucalyptus and lemon balm appear. There is also a hint of violet and dried rose, reminiscent of noble Bordeaux blends. Maturation in barrique brings nuances of vanilla, dark chocolate, mocha, subtle coconut and roasted hazelnut into play. A delicate hint of smoke and toasted wood underlines the powerful, classic Palatinate style.
On the palate, Umami Cuvée Goldkapsel - Ellermann-Spiegel displays impressive density and tension. The dark fruit is juicy, ripe and clearly defined. Morello cherry, cassis and blackberry set the tone, accompanied by nuances of ripe plum and a touch of elderberry. The spiciness from the barrique ageing weaves elegantly with the fruit. The result is a multi-layered impression that charmingly picks up on the name “Umami”.
The tannin structure feels silky yet powerful and grippy. Fine, ripe tannins caress the tongue and give the wine backbone. The acidity is precise and lively; it supports the fruit and, despite 14.5% alcohol by volume, provides a surprisingly fresh profile. The body is full and forceful, yet balanced. The wine fills the palate without seeming heavy.
On the finish, the Umami Cuvée is long, deep and aromatic. Dark berries, cocoa bean, espresso and a touch of liquorice linger. A cool hint of mint and eucalyptus remains on the tongue, creating an invigorating contrast to the abundance of dark fruit. The finale is complex and immediately invites the next sip.
The Palatinate origin clearly shapes the character of this cuvée. Warm days bring ripeness and intensity, while cool nights in autumn preserve tension and freshness. The soils range from loess and clay to sandy sections that promote good drainage and low yields. This yields a concentrated yet finely structured red wine in the Old World style.
The grape varieties Cabernet Franc, Merlot and Pinot Noir (Spätburgunder) complement each other ideally. Each variety contributes its strengths, together forming a harmonious whole. Typical aromas stand out clearly:
- Cabernet Franc: cassis, a hint of bell pepper, fine spice and structure
- Merlot: ripe plum, richness, soft tannins
- Pinot Noir: red berries, elegance, fine creaminess
From this emerges a red wine that shows a clear stylistic profile in the glass. Fruit, spice, oak and freshness interlock like gears. Umami Cuvée Goldkapsel - Ellermann-Spiegel is aimed at connoisseurs who seek dense red wines with depth and classic élevage. These features help to classify it in your own cellar:
- Style: classic, powerful, yet elegantly balanced
- Texture: dense, with silky, ripe tannins
- Oak: noticeable, nobly integrated, with vanilla and toast notes
- Fruit profile: dark berries, cherry, plum
- Finish: long, with chocolate, coffee and herbs
This Palatinate red wine unfolds its full magic with a bit of air in the glass. In a large Burgundy glass, it reveals every layer of the blend, from the deep fruit to the fine herbal spice. It is an excellent choice for mature moments when quality, character and tension take centre stage.
Production of Umami Cuvée Goldkapsel by Ellermann-Spiegel
The grapes for this cuvée come from selected parcels in the Palatinate. The mild, sunny climate offers ideal conditions for ripe, aromatic Cabernet Franc, Merlot and Pinot Noir grapes. The vineyards benefit from good ventilation and sufficient sunshine. The berries therefore ripen slowly, with thick skins and concentrated juice.
The soils in these sites consist of a mixture of loess, clay and sandy components. This combination lends power and spice to the wine, but also elegance and finesse. Low yields ensure high concentration in the harvested fruit. Harvesting is selective, so that only fully ripe, aromatic grapes reach the cellar.
Cabernet Franc provides structure, fine herbal spice and cool cassis notes. Merlot contributes volume, dark plum and a soft texture to the blend. Pinot Noir adds red fruit, elegance and fine creaminess. Together, they create a cuvée that combines power and finesse and showcases the Palatinate as a demanding red wine region.
In the cellar, the Ellermann-Spiegel wine estate focuses on gentle processing. After harvesting, the grapes are destemmed and undergo a careful maceration period. This extracts colour, tannins and aromas from the skins. Fermentation takes place at controlled temperatures to preserve fruit and freshness and ensure finely grained tannins.
After alcoholic fermentation, the wine matures for about twelve months in small 225-litre barriques. Some of the oak comes from French forests, contributing fine vanilla and toast aromas. Another part of the barrels has a more subtle level of toasting and adds structure without overpowering the fruit.
During maturation in small oak barrels, fruit, tannin and oak spice merge into a harmonious whole. Time in barrel rounds off the tannins and gives the wine additional complexity. The result is a carefully composed cuvée that clearly reflects the estate’s quality standards. Terroir, grape varieties and craftsmanship interact here with precision.
Enjoyment recommendations for Umami Cuvée Goldkapsel by Ellermann-Spiegel
Umami Cuvée Goldkapsel pairs perfectly with dark meats and hearty dishes. Its dense structure and spicy dark fruit harmonize impressively with braised dishes and intense roast aromas. A classic beef roast in red wine sauce makes a great partner.
This wine is also an excellent match for braised leg of lamb with herb crust and root vegetables. Braised veal cheeks, game dishes such as saddle of venison or venison ragout, and hearty beef cheeks ideally complement its intense character. A juicy entrecôte with herb butter and baked potatoes also pairs beautifully.
Vegetarian cuisine enters into a wonderful dialogue with this cuvée as soon as robust flavours are involved. A porcini risotto or a ragout of wild mushrooms nicely brings out the wine’s earthy spice. Fried eggplant with tomato, thyme and Parmesan or lasagne with a rich tomato-vegetable sauce also pair very well.
With cheese, Umami Cuvée is a strong partner for aged hard cheeses and semi-firm varieties. A well-aged Comté, a tangy mountain cheese or mature Gouda perfectly accompany its dark fruit and chocolate notes. Blue cheese with a bit of fig mustard also creates an exciting contrast.
This red wine is recommended for festive dinners, special evenings for two or intense moments of enjoyment with good friends. It works both as a partner to the main course of a multi-course menu and as a soloist for long conversations by the fireplace or on the terrace on a cool night.
The ideal serving temperature is around 15 to 18 degrees Celsius. Starting slightly chilled initially emphasizes the freshness, while the wine reveals more depth in the glass over time. A carafe or decanter enhances the experience, especially for younger vintages. An hour of aeration gives it even more expression and harmony.
It unfolds its aromas best in a large Burgundy glass, as recommended by the winery. The wide opening gives the cuvée space to develop and display its fine nuances. Properly stored – in the dark, at a constant, cool temperature – Umami Cuvée Goldkapsel will show exciting development over many years.
