The basis for the powerful The King's Thorn Pinot Gris from New Zealand South Island are grapes from the grape variety Pinot Grigio. On New Zealand's South Island, the vines that produce the grapes for this wine grow on soils of limestone. Due to the moderating influence of the nearbyRiver, the grapes ripen more slowly and develop more aromatic complexity. The development of the grapes for this Pinot Grigio wine is influenced to an undeniable extent by the climate of the growing region. In New Zealand South Island, the grapes thrive in a rather cool climate, which is reflected, among other things, in particularly long and uniform grapes and a rather moderate must weight. After the hand harvest, the grapes are immediately taken to the press house. Here they are sorted and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. Fermentation is followed by aging on the fine lees for several months before the wine is finally drawn into bottles.
