Vinification of the Three Pines Cabernet Sauvignon from Stark Condé
The basis for the powerful Three Pines Cabernet Sauvignon from South Africa is grapes from the Cabernet Sauvignon and Petit Verdot varieties. The grapes grow under optimal conditions in the Western Cape. Here, the vines sink their roots deep into soils of granite and clay. After the harvest, the grapes are brought to the press house without delay. There they are sorted and gently crushed. Fermentation then takes place in small wooden barrels at controlled temperatures. After fermentation is complete, the powerful Three Pines Cabernet Sauvignon is aged for another 22 months in French oak barrels.
